Winter Skate Comments

Comment: First off I just need to point out that this is true about ONLY the winter skate. Cow nose,sting rays,etc DO NOT work as well at all! But if you have the winter skate it is actually quite good eating. They just have a lot of cartilage and you have to use just the wings. Clean it quick, parboil the wings for about 30 secs to get the skin off and fillet like a flounder. I usually use buttermilk to soak them in, in the fridge for a couple of hours and some lemon butter and pepper on the grill. Good eats!!
